Background
This particular wine was picked from plots of Grenache Gris, Macabeu and Grenache Blanc grown on schist and matured for six years under attractive floral notes. The journey of this wine began in 2006 with three barrels that had surprisingly taken on oxidative qualities and were patiently set aside. Over the years, a cap of yeast cultures developed on them, eventually earning it the name "Cioran", an anagram reminiscent of the author of the same name, known for his sharp, direct and focused writing style - characteristics that are reflected in this wine. Similar to other dry white wines from Roc des Anges, Cioran is harvested early, which gives it its unique character.

It presents itself in a strong and shimmering gold.

Aroma
An invigorating white wine, Cioran is characterised by an intense, distinctive yet elegant bouquet that evokes the scent of sea salt almonds accompanied by sea spray, sea breeze, iodine notes, beef broth, soy sauce and hints of apple skin, peach pit, banana peel, green banana and dry biscuits.

Taste
On the palate, it seduces with a razor-sharp expression that reveals a salted lemon, fine apple fruit and tantalising spice. It has similarities to a very fine white Manzanilla sherry and harmonises perfectly with a salty umami cuisine. This drop is a real discovery and should definitely be tried!

Recommended dishes
Instead of aperitifs with seafood platters, this wine could be enjoyed with smoked oysters or salt and pepper squid. A cold gazpacho with fresh garden herbs instead of a cold tomato consommé would be a refreshing accompaniment. And instead of a tart with chicory and smoked salmon, colourful vegetable quiche or smoked trout salad with radishes and herbs could be excellent.
