Information about the cider
The idea of the circular economy of an ideal biodynamic farm includes many components. In addition to wine, these include, for example, animals, vegetable, fruit or cereal cultivation. At Odinstal, where this idea of circular economy, holistic, sustainable agriculture and also permaculture is implemented, there are cattle and also orchards. From these meadow orchards come the apples for the cider, which is known as the Pétillant naturel is produced. In the process, the fermenting cider is filled onto the bottles and continues to ferment in the bottle.
Color/Look
Intense golden yellow with yeast cloudiness/fine perlage.
Nose
On the nose, the 2021 Cidre Pét-nat shows apple fruit, apple peel, a clear yeast note, the scent of cereals and a flower and herb meadow. An extremely inviting, refreshing fragrance, very puristic and inspiring.
Palate
Slightly acidic is the impression of the apple fruit, green, yellow and red, accompanied by the fine tannin of the apple skin. A crisp, fresh product with a delicate alcohol of 5.5 vol%. Awakens pure drinking desire and whets the appetite for delicious accompaniment.
Use a narrow glass so that the carbon dioxide does not escape too quickly.
