Let us first look at the appearance of this unique wine. Its medium straw tone with a hint of development leaves the viewer absorbed, its slight cloudiness maintains the tension.

The fragrance notes are a symphony of Biancu Gentile, Vermentinu and Genovese, which skilfully highlight the unmistakable character of Clos Venturi. They take us to the maquis, where floral and herbaceous notes predominate. Immediately afterwards, our olfactory senses are conquered by the freshness of lemon peel, cedrat lemons and a surprising smoky minerality. A spicy citrus turn with lemon thyme, lemon verbena, preserved lemon and a hint of resinous incense is hard to miss.

From the very first sip, the Chiesa Nera reveals its creamy full-bodiedness and complex expression, which the twelve months of yeast ageing gives it. The flavour profile is varied and includes tangerines, quinces as well as white peaches and apricots, rounded off with subtle notes of anise, sage and thyme. A subtle yet persistent salty note develops, reminiscent of seaweed. Fermentation and maturation in concrete add another dimension of minerality and tension, while the natural freshness emphasises the citrusy character and length of the wine. This white wine is without doubt one of the best in Corsica.

To optimise the enjoyment of this Corsican white wine, I suggest the following dishes: Tuna tartare on garlic toast, mullet in a herb coat or guinea fowl tajine with preserved lemons. Stunning!
