2020 Terre di Corzano, Fattoria Corzano e Paterno, Tuscany/Italy

The grapes for the cuvée of 90% Sangiovese and 10% Canaiolo are harvested by hand and fermented separately by grape variety and vineyard. In top vintages, up to 5% Rappen are also fermented. Fermentation takes place spontaneously with our own yeasts in small 1-tonne vats and open fermenters. Maceration lasts between 21 and 35 days, depending on the quality of the grapes, the location and the soil. Extraction is done by gentle submersion of the marc, rarely by pumping over. Malolactic fermentation takes place partly in wood, partly in steel, before the wines mature for about a year in "botti grandi" of 25 and 40 hl and a small part in used barriques and tonneaux.

Ruby red with violet reflections, transparent, bright and clear.

Nose

The 2030 Terre di Corzano by Corzano e Paterno presents itself like a picture-book Chianti in the testing situation Sour cherries and dark dark chocolate mingle with spicy aromas such as bay leaf, juniper and air-dried ham. Dried cranberries and peonies float above, giving it racy drinkability and formidable freshness.

Mouth

The cuvée is wiry on the nose with focused fruit Aromatically, the sour cherry has a firm grip on the fruit department, with the tightly bundled fruit in right proportion to the precise acidic nerve. The dominant cherry presents itself slender with a taut connective tissue, plus its delicate astringency thanks to the fine, silky tannin, which once again nestles along the vibrant acidic nerve of the Sangiovese and accompanies it into the long finish. A wine that seeks proteins and fats and does not fear salt.
