It is very typical for Burgundy that names and farm sizes change and reshape again and again. In the end, it was no different at Domaine Chavy-Chouet. Even though Romaric Chavy is already the seventh generation of winemakers, it was not until 1982 that the first bottles were filled under the Chavy-Chouet label. Romaric's grandparents had brought the property into the family. His grandfather was a Chavy from Puligny-Montrachet, his grandmother a Ropiteau from the famous winemaker and negociant family. Albert Chavy-Ropiteau still sold the yield of the harvest to Bouchard Père. It was not until 1982 that Romaric's father Hubert decided to fill the first bottles after marrying a winemaker's daughter from Pommard. At first he called the domaine Chavy-Chouet, but then switched to bottling the wines under his own name, i.e. »Hubert Chavy«.

Romaric joined the winery in 2006 after completing his training, spending time with his godfather François Mikulski and then also working in Greece and South Africa, among other places. Since the sudden death of his father in 2014, Romaric has been running the domaine together with his wife.

The estate's great treasure are the excellent plots in Meursault, for example Les Narvaux, Les Charmes, Les Genevrières and the monopoly site Clos de Corvées de Citeau. In Saint-Aubin, it is the 1er Cru Les Murgers des Dents de Chien, whose quality has clearly improved with climate change. There are also Les Enseignères, Les Champs-Gain and Les Folatières in Puligny-Montrachet, as well as Pinot plots in Volnay and Pommard. But it is not only the sites that score here, but the quality of the vines, which are up to 70 years old and have been cultivated without herbicides for 30 years and exclusively organically for several years.

In the 15 years that he has been running the Domaine, Romaric has adopted a phrase from Henri Jayer: »Young winemakers should move with the times and study oenology very carefully, then get by without it.« His wines have always become clearer and more exciting, edgier and purer.

The 2019 vintage

Every year brings new challenges. 2019 again had a lot to offer. First, there was the frost on 3 and 5 April. Although Romaric has purchased several large turbines to support the air circulation in the vineyards and thus minimise the frost, this only works with cold, dry air. During the nights, however, it was icy and damp. So he could not change the fact that there were crop failures of up to 40 % in some vineyards.

The next challenge consisted of some hot and dry periods, but the vineyards coped well, not least because of their age and the deep roots of the vines. When the team started harvesting on 7 September, the vines were picture-perfect.

Romaric appreciates the 2019 vintage, which is more concentrated and above all more acidic than the 2018 vintage, where one had the feeling that one could drink all the wines directly. 2019 seems much more classic, as far as the newer vintages can still be described as such. Definitely, however, they are 1er cru wines that demand cellar maturity and have a high storage potential. Particularly recommended to get to know Romaric's style are the Bourgogne blanc from the Meursault single vineyard Les Saussots and the Bourgogne rouge from the Pommard single vineyard La Taupe. These are already very accessible and very brilliant wines with precision, freshness and finesse.
