From the heart of Château Revelette, encompassed by 30 hectares of vineyards sheltered by the beauty of the Montagne Sainte-Victoire, comes the 2022 Rosé. About two-thirds Grenache, Cinsault, Cabernet Sauvignon, Carignan and Ugni Blanc, this well-considered rosé was fermented separately. After a maceration of eight hours, malolactic fermentation took place only for certain varieties, while further ageing took place in cement barrels.
In terms of colour, it presents itself in a graceful salmon pink with striking orange undertones. Right from the start, the Revelette Rosé 2022 radiates refinement and elegance and confirms its origin with a bouquet of grapefruit, white peach, raspberries and red currants. The typical Provençal herbs blend harmoniously with the scent of orange blossom, a hint of liquorice, chalk and white flowers, giving the wine a sensual, juicy and summery character.
On the palate, this wine continues to present itself sensually. The Revelette Rosé convinces with its juicy character, its silkiness and this year's pronounced liquorice and aniseed notes. The balanced acidity appears round and silky and is accompanied by a minerality that is initially discreet but becomes more pronounced in the finish. Red fruit notes such as sweet cherries, raspberries and strawberries characterise the taste.
Instead of the toasted bread with tomatoes and sardines, I recommend a cheese trio with fig jam. As an alternative to risotto with summer vegetables and roasted prawns with pesto, try a light goat's cheese omelette with fresh herbs. Instead of the tart with tomatoes and green asparagus, a refreshing melon salad with feta and mint could be an excellent choice.
