This deep, violet-red hue leaves no doubt about the intensity of this wine.
The 2018 Chinon of Château de Coulaine reproduces the characteristic Cabernet Franc with an amazing precision and freshness that stands out particularly on this occasion. Its unique bouquet presents a veritable symphony of scents: The clear presence of blackcurrant mixes with sloe, raspberry and blackberry to create a fruity, intense opening. Added to this are notes of green and grilled red pepper, which infuse the aroma with a certain herbal spiciness. This blend is underlined with hints of juniper and chimney - and the hint of wood smoke and salmiak pastilles, which unites the whole into an impressively complex scent.
On the palate, it is powerful with sharp mineral accents and an abundance of dark fruits that promise refreshment. Its striking acidity and tannin structure are ripe yet lively, giving this wine an attractive and lively character. Not too burdensome, this presents a very individual wine that is ideal for pairing with typical French and Mediterranean cuisine.
Our palate-pleasing recommendations:
Enjoy it with crostini and a strong tapenade of Kalamata and Castelvetrano olives; pheasant breast, smokily smoked, accompanied by lentils and perhaps drizzled with a touch of blackcurrant vinegar; or a delicious grilled lamb chop accompanied by green peppers.
