Lowering the stage is pure Savagnin from the picturesque vineyard of En Beaumont in Château-Chalon. The transition to organic practices, unbroken at this point, has come to know this vintage, although the journey to organic certification began in 2015. The grape harvest was a craft and the transformation from fruit to wine took place in stainless steel, followed by ageing under the pile in oak barrels.

Scent characteristics
En Beaumont reveals an intriguing blend of green walnuts, hay and grass, dancing with a taut smoke and a hint of peat. Citrus zest and floral nuances add, layered with a hint of iodine and flint. A subtle creamy note creates images of lemon curd.

Taste profile
On the tongue, En Beaumont shows elegance and intensity. Its silky texture encompasses fine tannins that fit seamlessly into the profile revealing walnut-like and hints of toasted hazelnut. Saffron, hints of milk chocolate and candied ginger add accents, accompanied by bright citrusy notes that evoke vibrant, punchy acidity. This aroma-driven, dry yet slightly creamy wine makes for an exciting taste experience.

Recommended food combinations
Imagine enjoying this wine alongside a classic Bresse chicken in cream, or a lobster prepared in Vin Jaune, following the method of Alain Passard. A mature Comté would also make a wonderful pairing.

Alternatively, smoked fish or a potato gratin with Gruyère could also be excellent partners for this complex wine. A dessert of a lemon tart with meringue could end the tasting experience on a bright and citrusy note.
