Wine information
The site takes its name from its proximity to an ancient pilgrimage route leading from Vézelay to Compostela. It is located on a dome that stretches to the west. Its gentle slope, constantly exposed to a moderate wind, is composed of limestone rubble from the Kimmeridgian and decomposed soils that release crystals and minerals.
Nose
On the nose, the 2019 Chablis "Côte aux prêtres" is juicy and open-hearted, exuding aromas of ripe red apples, orange, lime, star fruit and mango. This exotic tendency is enhanced by ginger and coriander notes. Dry biscuits, vanilla and freshly churned butter refer to the previous ageing in small wooden barrels, iodine and salty hints are omnipresent. A firework of beautiful aromas raises great expectations for the first sip.
Palate
On the tongue, it presents itself taut, striking and with compact minerality. The carafe brings out the aromas of the nose again, complemented by oyster shells and lemongrass. With each sip, the saliva seems to flow more, the combination of the intense nose and the demanding palate testifies to great tension and radiance. A wine that likes to take on challenges in food pairings.
Decant at this stage if possible and do not serve too cold.
