Sparkling yellow, bright reflections
Nose:
The nose initially reveals slightly smoky hints. Accompanied by ripe pear and caramelized quince, a little toasted almond and wet chalk also appear. One could almost think of a pear tart with almonds. Delicate toasty flavors but mostly pure limestone with some hay and mountain herbs seem promising. Inevitably, thoughts of salty-sweet popcorn suggest themselves. This is typical for the cool north of Burgundy and its purism.
Palate:
On the palate, the 2018 Vau de Vey is powerful and intense. At the same time, it conveys the purity of a Chablis mercilessly well. Puristic and straightforward. The ripe yellow fruit copes wonderfully with the acidity. Then dryingly austere on the palate with plenty of chalky minerality. In the finish accompanied by delicate melting it presents the caramel and roasted notes from the nose.
