Nose
The Vernaccia di San Gimignano "Carato" from Montenidoli shows intense yellow fruits and delicate toasted aromas on the nose. Peach, apricot, mango and pineapple dominate it. The pineapple seems grilled. In addition, there is a delicate roasted aroma, reminiscent of good French oak barrels. Buttered toast and a little salted caramel add to the flavour. Lemon zest, bergamot and quince provide tart as well as fresh accents. Yellow blossoms whirr delicately in the background.
Palate
On the palate, it is creamy and powerful. The melting from the long yeast ageing is contrasted by an ideally balanced acid structure. The fruit is lush, concentrated and expansive. Above all, the grilled pineapple stands out again. Quince tart, tarte tatin as well as cream cake come in handy. Pleasantly tart as well as cool elements reveal themselves at the same time. The synergistic effects are warmly welcomed and in ideal proportion. At the end, it is juicy and stimulating to drink.
