Info about the situation

South Tyrolean simple pergola in very steep terrain. Loamy sand, volcanic origin and moraine deposits, very deep and permeable.

Info about the expansion

Biodynamic without the help of tractors. After the hand harvest, the grapes were crushed and fermented spontaneously in wooden fermentation racks, without temperature control with 80 % of crests. This was followed by five months of fermentation including cold maceration, ageing in wooden fermentation racks and oval barrels for 12 months and 10 months in concrete and oval barrels. Hand filling without fining and filtration.

Color

Bright, muted garnet red with violet lightening towards the rim.

Nose

The aroma of the 2018 Campill is dominated by deep and earthy components, tree bark, cigar smoke, chimney and beetroot make the start. With oxygen, dark and tart fruits enter the parquet, giving it facet and charm, sloe, mulberries, dark plum jam in combination with rosemary and thyme - how inviting.

Palate

On the tongue, it is elegant and refreshing at the same time, fine tannin meets invigorating acidity, embedded in a fruit that is rather red berry on the palate. Due to the moderate alcohol of 12 Vol% a Vernatsch that follows its destiny to accompany hearty dishes excellently when chilled. Thank you Martin Gojer for this wonderful Vernatsch!

Food recommendations by Christina Hilker

  • Brook char cooked with fir branches, bacon and radicchio
