Our fine Cabernet Franc grows on old vines that are between 45 and 55 years old, protected by a loamy, silty soil that rests on sandstone and red flint that gives way to a deep tuffeau subsoil.
Processing
With a yield of 40 hl/ha, the grapes are carefully hand-picked in special 12-kilogram boxes. Boned and fermented over a period of 30 days with minimal pumping, ageing takes place first for 12 months on fine lees and then in Burgundian pièces of five to seven years. An additional maturation phase takes place for another six months in a piece barrel to increase complexity.
Color
Characterised by a rich purple shade, enhanced by purple reflections.
Smell
The unmistakable aroma of Cabernet Franc, rich in dark fruits such as blackberry and cassis mixed with the subtle spice of green pepper, characterises this 2020 Cabernet Franc Clau de Nell. A robust yet elegant distillate with an impressive juicy note that is already revealed in the olfactory perception - its cool, herbaceous appearance is particularly noteworthy, suggesting an unsurpassed depth.
Taste
A dark fruity liveliness continues on the palate. Skilful grinding of the tannin and liveliness of the acidity leave an impressive stroll across the palate and lingers pleasantly in the long aftertaste. Once again we find a cool, graphite-influenced honest wine that conveys pure drinking pleasure and harmonises perfectly with intense dishes.
Drinking method
Served from a cool carafe at 16° in a large glass, it unfolds its fullness.
Food recommendations
Enjoy it with pea mint gnocchi and melted tomatoes, grilled beef steak with a colourful pepper garnish or rack of lamb with garlic breadcrumbs, jacket potatoes and polenta.
