Cellar Bufadors is a project of Recaredo's Ton Mata and his wife Encarna Castillo. The Les Voranes Brut Nature 2018 is made from 73% Xarel-Lo and 27% Macabeu, the total production has project character and comprises only 4749 bottles. For the second fermentation in the bottle, only must from the same parcel was added. The Les Voranes was aged in the cellar of Recaredo, all work was done by hand. Disgorged on 11.11.2021 after 37 months of yeast storage.

Brilliant straw yellow with bright reflections and fine perlage.

Nose

On the nose, the 2018 Les Voranes by Bufadors is skeletal with a saline character. Zero fruit for the inclined tippler, instead wet blackboard chalk, a fresh sea breeze, oyster shells and petrichor, the scent of wet road after a warm summer rain. Add to this the typical autolysis notes of toasted toast with salted seaweed butter. A distinctive Mediterranean bubbly with a high fun factor.

Mouth

Les Voranes also shows its austere side on the palate. The aforementioned stony and salty aromas are joined by citrus zest, the perlage sets spicy accents and is also structurally in the sparse notch. With fine-grained phenolics, it is enormously mouth-watering with invigorating acidity and striking minerality. Challenging with bite, a sparkling wine for the advanced.
