Wine
Champagne De Sousa et Fils, Tradition Brut
To the wine
A blend of 50 % Chardonnay, 40 % Pinot Noir and 10 % Meunier. Bottled on 08.04.2015, disgorged on 12. 04. 2016 with 7 gram dosage.
Color
light golden yellow
Nose
The classic Brut from the house of De Sousa opens with the scent of citrus fruits and almonds, in which a light note of fermented Boskop blends. With more air, the champagne becomes more yellow-fruited and shows chalky notes, over which lies a hint of jasmine.
Palate
On the palate, the Tradition Brut is directly present and punchy, the fruit bright and clear with creamy notes. These remind of lemon meringues, of wine foam, white peach, nectarine, apple and citrus. The seven grams of dosage are not noticeable, the champagne seems dry and the dosage balances the champagne until the mineral finish.
Food recommendations by Christoph Raffelt

- Char, nori and quail eggs
