Wine information
The Bourgogne Pinot Noir Antonin comes from 0.42 hectares in Chambolle, Brochon and Gilly-lès-Cîteaux. The vineyard work is organic, partly biodynamic and very labour-intensive. The Pinot Noir was completely destemmed and fermented in tanks. The wine was aged for twelve months in used oak barrels with little new wood. Jérôme used only indigenous yeasts, there was no fining, no enzymes and only a light filtration as well as no, or if there was, then only very low doses of SO2.
Color
deep, intense cherry red
Nose
On the nose, the Antonin A Pinot Noir that is silky and velvety, cherry and dark berry, juicy, open and elegant with a fine perfume of hedge roses, dark chocolate and Indian spices. This looks very promising.
Palate
On the palate, the wine is discreetly juicy, rather taut and with present tannin, even pithy with a simultaneously warm fruit and fine spice. The Antonin is less of a gourmandise and more of a grippy, pleasantly down-to-earth Pinot Noir.
