The wine is bright lemon yellow with subtle silvery reflections clear and shiny in the glass.

Nose

The aroma of the 2018 Bourgogne from the Clos de la Perrière monopollage of Clos du Moulin aux Moines inevitably makes the senses wander A, still warm, freshly baked brioche with a golden brown crust and an enticing, almost still doughy core. A paper-thin layer of the best raw milk butter. A slice of tempered foie gras made from unstuffed duck liver. Quince gelée with sage and a thin tranche of mango. Thinly shaved macadamia nut. A pinch of white muntok pepper and some fleur de sel.

The Clos de la Perrière is ready.

Palate

On the palate, this excellent, albeit unpretentious, interpretation of Burgundy plays with all its charms. The juicy, yellow fruit is invigorating yet subtle and unobtrusive. Fine stone fruit aromas spread out to follow a stony path with a long, sparse finish. Gripping acidity and structure give this purist documentation from Burgundy immense drinking flow and mischievous seriousness.

Food recommendations from Peter Müller

  • Porcini gratin with wild herb salad and hazelnut bread
  • Saltimbocca with tagliatelle in sage butter
