The texture seems elegant and silky with light tannin and an acidity that at first also already seems silky and ripe, but over time and into the finale becomes more and more present and demanding, until the Burgundy then slowly ebbs away in a longer finale with salty notes that encourage salivation. The four hectares of the vineyard are divided into three hectares of vines and one hectare of compensatory land with boulders, hedges, fruit trees, grassy meadows with numerous orchids and rare tree species The vines were planted very densely with canes per hectare and raised in Guyot and Lyra.

Wine information

For this wine, Boris Champy used Chardonnay from the Montagne de Cras vineyard in Nantoux. The parcel is located in the Hautes-Côtes de Beaune at an altitude of 382 meters. The soils are interspersed with pebbles , limestone, calcareous marl and clay. The four hectares of the vineyard are divided into three hectares of vines and one hectare of compensatory land with boulders, hedges, fruit trees, grassy meadows with numerous orchids and rare tree species The vines were planted very densely with 10,000 canes per hectare and raised in Guyot and Lyra. The wine, fermented spontaneously, was aged for twelve months in used pièces and small stainless steel tanks on the yeast.

Nose

Boris Champys Hautes-Côtes de Beaune Élévation 382 2019 offers a ripe, almost soft and silky nose with notes of ripe apricots and peaches, melons, yellow apples along with a few slices of pineapple and lemon. There is also a hint of nuts lightly toasted in honey.

Palate

Also on the palate the white Élévation 382 Ripe and full with the already mentioned mix of slightly exotic notes as well as those from the local orchard. The texture seems elegant and silky with light tannin and an acidity that at first also already seems silky and ripe, but over time and into the finish becomes more and more present and demanding until the Burgundy then slowly subsides in a longer finale with salty and salivary notes.
