Wine information

For this wine, Boris Champy used a vineyard with an old sélection massale the Aligoté Doré and the Golden Aligoté, the name describing the colour of the berries. The plots are located in the Hautes-Côtes de Beaune at an altitude of over 400 meters. The soils are interspersed with limestone, calcareous marl and clay. The vines were planted very densely with 10,000 vines per hectare and raised in Guyot and Lyra. The spontaneously fermented wine was first aged for twelve months in used pièces aged on the yeast and then again a few months for harmonization in stainless steel.

Color

pale straw yellow

Nose

Boris Champys Burgundy Aligoté Doré 2019 is a fine and elegant Aligoté with notes of chamomile flowers and yellow apples and pears, a little brioche and lightly toasted almonds. The wine appears inviting, fresh and shows a certain elegance.

Palate

On the palate, the Aligoté offers a precise acidity, appears extremely fresh and clear with crisp notes of green apples and yellow citrus fruits. In addition, there is a slightly chalky texture and a salty mineral trace. The Aligoté has quite power and body, but prances agilely on the tongue.

Food recommendations by Christoph Raffelt:

  • Artichoke hearts with tomato aioli and lemons
    (Vegetable & Vegetarian)
  • Thai glass noodle salad with shrimps and coriander
    (Seafood)
  • Claire Island salmon grilled over beech wood with fresh goat cheese
    (Fish)
