Color:
Cloudy old gold with light copper reflections.
Nose:
The nose of the 2019 Sextant Bourgogne Aligoté from Julien Altaber is open and inviting. Green and yellow apples mingle with notes of wet blackboard chalk, some orange flower water and sage tea in the top notes. Citrus zest and fresh garden herbs complete the nose of this old varietal Aligoté Doré. Grown in Puligny-Montrachet on vines over 60 years old, this is the first parcel Julien Altaber acquired in 2010.
Mouth:
On the palate, the Sextant is resting and silky with a mouth-filling entry, creamy melt and powdery minerality. Immediate, direct and approachable orchestrated by ripe and fully integrated acidity is aromatically carried by crumbly stone fruit and citrus oil. Everything seems to be in the right place, and so this bottle also empties without fuss, keeping a promise that it explicitly never made. Consequently, one has to start all over again, to everyone's delight.

(Vegetable & Vegetarian)
- Fish stew with celery, fennel and bay leaf
