The Seconde Nature Champagne captivates with its finely spicy and chalky notes, which combine with citrus fruits, stone fruits and red berries. On the palate, it is precise and fresh with an elegant extract sweetness and a light caramel note. This multi-layered champagne goes perfectly with lightly seared salmon, Emmental ham puff pastry tart and crab croquettes.

Wine information

The Seconde Nature is a Champagne from 45 % Pinot Noir, 40 % Chardonnay and 15 % Meunier. The fruit comes from the Chamery single vineyard sites "les Vigneules", "les Spectres" and "les Caquerets" with a south-east orientation of the slopes. The topsoil consists of calcareous loam interspersed with limestone pebbles, the subsoil of sands and fossil shells. The base wine from the Cœur de Cuvée was fermented spontaneously and aged for nine months in four-year-old 228- and 400-litre barrels. Biological acid reduction took place. The wine was not sulphurised, but was vinified as a Brut Nature Disgorged. This bottle was filled in 05/2020 and disgorged in 01/2022.

Nose

The Seconde Nature is an open, finely spicy and chalky champagne that combines notes of confit lemons, some light stone fruit and a few red berries with white flowers, tobacco and chalk. These impressions are rounded off by a warm toast very lightly spread with butter and honey and a hint of caramel.

Palate

On the palate the Champagne precise and fresh, at the same time again spicy in a very fine way with a hint of oxidation. It is full of energy and lively minerality. Citrus notes, a little tobacco and sweet spices can be found here again. Despite the dryness of the Seconde Nature - The champagne offers an elegant and smooth extract sweetness and, as in the bouquet, a very slightly perceptible note of caramel. In the finish, red berries and herbs appear alongside the citrus fruit, while the mineral impression on the palate becomes more and more pronounced and a slight saltiness emerges. This is once again a master of its class in 2019.
