The Seconde Nature Rosé de Macération is a Champagne from 100 % Pinot Noir. The fruit comes from 1er Cru sites in Chamery. The topsoil consists of calcareous loam interspersed with limestone pebbles, the subsoil of sands and fossil shells. The base wine comes from the Cœur de Cuvée, but it had maceration for 48 hours before pressing. The juice was fermented spontaneously and aged for nine months in used 228- and 400-litre barrels. Biological acid reduction took place. The wine was not sulphurised, but was vinified as Brut Nature Disgorged. This bottle was filled 05/2020 and disgorged 02/2022.

Nose
The Seconde Nature Rosé de Macération is an intense champagne that has a lot of individuality due to the maceration of the fruit. It combines notes of redcurrants, cranberries, wild strawberries and barberries with notes of stalks, dry wood and stone, rooibos tea and hedge roses.
Palate
This type of champagne is primarily one to accompany food. It is not the classic aperitif. Therefore the Rosé de Macération consciously also phenols and tannins. At the same time, however, it builds up pressure and appears fresh and mineral. Red berries and grapefruit juice are present here as well as notes of earth and stone, undergrowth and berry skins. Besides the fine spiciness, earthiness and stoniness, there is also a creamy silky texture and a charming mousseux.
