Wine information

The Grisblanc is a Coteaux Champenois, a still wine from Champagne made from the seven grape varieties of Champagne, i.e. Pinot Noir, Pinot Meunier, Chardonnay, Pinot Gris, Pinot Blanc, Petit Meslier and Arbane. The fruit comes from Vrigny, Chamery and Coulomnes. It was pressed directly and fermented spontaneously in the same wood, where the wine was also aged on its lees for the following ten months before being bottled unfiltered and unsulphured.

Color

Intense straw yellow with a very light hue like a Blanc de Noirs.

Nose

The Griblanc is certainly one of the most unusual Coteaux Champenois. Both the use of all seven approved varieties and the vinification without sulphur are unusual. The wine smells correspondingly unique. With its slight oxidation, its clear light tobacco spiciness, the notes of stone, dry herbs, nuts and apple peel, it is reminiscent to a certain extent of wines from the Jura.

Palate

On the palate, the tobacco spice continues and is supported by a lively acidity and a citric note. This comes across as very independent, bright and fresh, punchy and pithy. Here, too, the slight nuttiness and stoniness are evident, but at the same time a sensual creaminess that allows the wine to glide over the palate.

Food recommendations by Christoph Raffelt

  • Guinea fowl in white wine-morel sauce
  • Norway lobster and savoy cabbage tossed in lemon beurre blanc
  • Lightly matured goat cheese with green lemon and elderflower chutney
