Info

The grapes for the Cuvée Perpétuelle Rosé come from the Montage de Reims. To be precise, from the villages of Chamery, Vrigny and Coulommes. The three grape varieties Pinot Noir, Chardonnay and Pinot Meunier grow on loamy limestone soils, clay loam soils and sand. Pinot Noir accounts for 50% of the assemblage. 7% of it were vinified as red wine, 10% have undergone maceration on the skins. The other two grape varieties - Chardonnay and Meunier - each account for 25%.

Fermentation was 75% in stainless steel, with the final quarter in 228l oak barrels.

The 2015 vintage forms the basis, but is supplemented with 30% reserve wines.

Bottled in May 2016 for the second fermentation.

Degorgement took place in June 2021 at a dosage of 4g7l.

Intense bright rosehip red, light reflections, very fine perlage

Nose

Cyril Bonnet gets noticeably better from year to year. The Cuvée Perpétuelle Rosé based on the 2015 vintage shows a skilful harmony and diversity in the glass. Red currant, strawberry green and raspberry deliver expected aromas. It lives much more intensively from the earthy aromas of the currant bush - i.e. leaf and wood. Likewise, almond blossom and chopped almonds show up alongside white pepper and yellow apples. Very harmonious between spice, freshness and fruit. Rosé is a special topic in itself with pubic wines, but in this style it seems very animating, cool and inviting.

Palate

From the first sip, it shows itself directly ambivalent. On the one hand, there is its cool, elegant style, which lives from stony nuances, clarity and a slender framework. On the other hand, it delivers delicate fruity nuances. Far from kitsch and fruit salad, but very subtle and pleasantly restrained. Rosehip, raspberry and red currants. Herbal aromas like parsley and a little lemon balm also find their way in. The precision and style are outstanding. The fruit is cut directly by a perfectly integrated acid structure, so that fruit sweetness or opulence do not stand a chance. The perlage is very small and fine. The mousseux only provides melting and body in small doses.
