Wine information
Sparkling wine made according to the traditional method with Chardonnay from the Tauber valley and the Palatinate. Champagne clones were used. The grapes were pressed on an old basket press and fermented in used wood. The base wine was also aged there until it was bottled. The special thing here is that there is not a filling dosage of sugar and cultured yeasts, but yeast-transferred wine is used instead of yeast. The wine lay for three years sur lattes. No sulfurization, no dosage.
Color
intense straw yellow with fine mousseux
Nose
The blank of blank smells intensely of ripe yellow fruit, of citrus fruits, a trace of vanilla, of wood and brioche. It is a very attractive mixture of yellow pears, yellow plums and juicy oranges and grapefruits, into which more and more notes of butter biscuits and very good brioche integrate with increasing air. In addition, one gets a hint of crushed stone and some wood use in the base wine.
Palate
On the palate, the sparkling wine delivers fullness, precision and freshness at the same time. The blank of blank lives in this tension of ripe yellow and white-fleshed fruit, tart citrus aromas, plenty of fresh acidity and fine spice. The foam is complex and elegant, silky at first, then increasingly brisk, punchy and mineral. A remarkable wine!
