The 2019 Blanc de Blancs was produced using traditional bottle fermentation. The grapes for this sparkling wine are grown on volcanic rock with loess overlay and are harvested at the earliest possible stage of ripeness to keep the acids of the base wines stable. The whole grapes are gently pressed and only the cuvée, i.e. the juice of the first pressing, is used. Only when the dosage is added does the sparkling wine receive a small dose of sulphur. It was disgorged in June 2022 and filled as Brut with a slim four gram dosage.

Nose
Voluptuous and hedonistic, the 2019 Blanc de Blancs radiates from the goblet. Orange blossom water, lemon zest, yellow stone fruit and ripe yellow apples are joined by fluffy notes of warm yeast puff pastry along with sugar icing and peeled sweet almonds.
Mouth
On the palate, the Blanc de blancs is juicy with good pressure and fills the entire palate with fine bubbly mousseux. The fruit is citrusy with dark yellow tones of crisp apple and notes of buttered orange marmalade toast. The acidity is wide-ranging and gets animating support from delicately salty notes for exaggerated drinkability.
