Tenuta di Castellare is located on a plateau on Lipari, the largest Aeolian island north of Sicily. The temperate, windy climate and the influence of the sea characterise the microclimate of the Piana di Castellaro, which benefits from the strong temperature amplitudes between day and night. The volcanic soils are rich in minerals such as phosphorus, potassium, iron, magnesium and calcium, giving the wines their particular texture, structure and longevity. The vines are in single-pole training with 7000 cane density.

The Bianco Pomice is a cuvée of 60% Malvasia delle Lipari and 40% Carricante. Hand-picked, the Malvasia was fermented in steel and the Carricante in used barrels and aged on the lees for six months.

Mouth

Super juicy on the palate, it oscillates between Mediterranean herbal spice and salty notes and refreshes with a good grip and vertical structure. Puristically gripping, the fruit is subordinate to this structural and haptic concept rather than the dominant leitmotif. An ideal partner with extremely low half-life to the aroma-strong Sicilian kitchen with emphasis on mussel stuff and fish.
