Nose

The name of the wine comes from a half-ruined orangery from the Renaissance that adjoins the Chateau de Béru. In the vineyard, which is surrounded by a high wall and is less than one hectare in size, stand the vines for this 2015 Chablis. And it produces a scent of orange blossoms and other aromas that can actually transport you to an orangery. In addition to this distinctive aroma, which is complemented by a kind of cream slice with the finest vanilla and a little butter, the wine inspires already in the nose by freshness and clarity.

Mouth

One notices the extra year of maturity that the wine has received. The time has made it more open and also more complex. On the palate, the creaminess already perceived on the nose becomes even more apparent. It envelops the whole mouth and combines with the juicy fruit of oranges, stone fruits and pears. But what is really fascinating is the striking, very present, lively acidity and saline that permeates this Chablis at the same time. There is a lot of body and a lot of freshness here, and you can hardly wait for the fish menu.

Food recommendations by Christoph Raffelt

  • Norway lobster with white asparagus and orange beurre blanc
  • Young potatoes, steamed salmon and hollandaise sauce
  • Gougères, cheese puffs, straight lukewarm from the oven, best with Gruyère
