Description of the wine
This special drop is born from the spicy calcareous marl soils of the Barolo region in Italy, thanks to grapes from vines over ten to 45 years old that draw their nuances from different parts of the region.
Maturation process
After a careful manual harvest, the grapes are vinified and vinified according to their sites and plots. They are destemmed and then transported to stainless steel fermentation tanks for cold maceration. A maceration with repeated over-pumping leads to the post-fermentation maceration phase, which is initiated by submerging the pomace. After about 24 days of contact with the must, malolactic fermentation takes place in used barriques. The wine, still separated by origin, is then aged for about 30 months in large wooden barrels and is neither clarified nor filtered before bottling.
Color
With a translucent purple hue that lightens towards the rim and blends with striking brick red reflections, this wine is a visually appealing companion.
Aroma
This fine Barolo Castiglione by Vietti from 2017 enchants with its seductive bouquet of bright red berries, floral notes of rose petals and rosehip, combined with a hint of noble cedar wood and cinnamon spice. On closer inspection, further aromas such as incense, marzipan, nougat and latte unfold from the glass, arousing curiosity and the desire to drink.
Taste
On the palate, it scores with elegance, complexity and a ripe, yet youthful tannin and acid structure, which is harmoniously balanced by its fine fruit sweetness. A true marathon runner among wines, it still has many years of maturation ahead of it and its weightlessness puts the connoisseur in a state of ecstasy.
Recommendation
For the impatient wine lovers, it is recommended to decant the wine at least two hours before drinking and to serve it from a large wine glass with a rich and aromatic meal.
Alternatives to the food recommendations
Try it with a salad of red cauliflower, roasted hazelnuts and pear, or with hearty ravioli with black pudding, apples and spring onions. It is also excellent with a tender veal chop served with truffled fennel, artichokes and carrots.
