Location information:
The monopoly site "Moulin aux Moines" in Auxey-Duresses is one of only four unique holdings of the Domaine. The "Vielle Vignes" section, planted in the 1950s, is located in the upper part of the vineyard at an altitude of 298 m, facing north-east.

Terroir characteristics:
The terroir of the 'Vielle Vignes' stands out from others due to its steep, drier, and deeper nature.

Processing details:
Hand harvesting results in a yield of 38-44 hl/ha. The wine matures for 16-18 months in previously used barriques. The total production is 4000 bottles.

Optics:
The colour appears as a deep ruby red, interspersed with pronounced violet reflections.

Odour profile:
At the outset, the 2017 Auxey-Duresses Vielles Vignes conveys a fresh, graceful charm. The fruit aromas of sloe, blackberry and blackcurrant merge with this one of leather, tobacco, dark undertones and mineral tones. When consumed with sufficient oxygen, aromas of noble dark chocolate and floral nuances of violets unfold.

Flavour profile:
On the palate, the wine presents an impressive, fresh and dark berry character. With a playful lightness, it glides silkily over the tongue, accompanied by a stimulating acid profile and fine tannin. The moderate alcohol content of only 12.5 % further enhances the pleasure. It is a wine that combines finesse and power!

Tasting recommendation:
For optimal development of the aromas, carafe the wine with sufficient oxygen and serve in a Bourgogne glass.

Alternatives to the food recommendations:
Try this wine with a carpaccio of beetroot and roasted portobellos, coq au vin with crispy pancetta or a main course of caramelised pork belly with sweet potato puree and pak choi.
