Remontage is done with and without air contact. The vineyards are worked manually.

This vineyard has a long history. Already in the tenth century, the monks of the abbey of Cluny cultivated wine here. The Ahmad family took it over in 2008 and wants to continue its long tradition with the help of biodynamic viticulture. The vineyards are cultivated manually. Ploughing is done by horseback in order to preserve the soil and to compact it as little as possible. In the wine cellar the natural work is consequently continued. Vinification takes place in the 15th century cellars in wooden vats, stainless steel and concrete barrels, depending on the appellation. Remontage takes place with and without air contact. The wines mature between 10 and 22 months, whereby new barriques are used less and less. In the beginning, between one fifth and one third were used, depending on the character of the wines, now only ten percent are used.
