Wine information
It ripens in the still warm period, which makes its acidity very low. This makes its texture very creamy. We age a smaller part in used oak barrels, the majority in stainless steel. A proportion of whole grapes in the fermentation gives the wine phenols and prevents it from becoming too broad.
Color
Muted golden yellow; slightly cloudy, as unfiltered.
Nose
Delicate yeasty notes meet equally fine fruity aromas of pear, apple and quince in the 2020 Auxerrois Basalt. The more air it gets, the more it unfolds and shows its whole facet. A very exciting and lively wine with depth.
Palate
On the tongue it shows a lot of minerality and saltiness, carried by juicy fruit, spice, fine acidity and density. An Auxerrois that serves food and gives great drinking pleasure, especially with dishes with vegetables and spicy touches.
