The cuvée of 70% Corvina, 20% Corvinone as well as 10% Rondinella and Molinara comes from the classic Valpolicella area. The soils are clayey limestone interspersed with rocks and stones. The vineyard is located on a hill 200 metres above sea level with an eastern exposure. With an average age of 15 to 30 years, the yield is a maximum of 8 tonnes per hectare. After selective harvesting, the grapes are slowly dehydrated in traditional wooden drying racks. The drying period lasts from the harvest until the end of January, beginning of February. During this time, the grapes lose about 40 % of their weight and undergo certain physico-chemical transformations that give the finished wine its aroma and unique concentration. This Amarone is fermented in stainless steel tanks at 10-15°C, and after fermentation it is aged for 36 months in 3000 litre oak barrels. After bottling, the wine matures for another eight months in the winery before finally being put on sale after four years.

Nose

The 2016 Amarone delle Valpolicella by Ca' la Bionda has a broad-shouldered nose a la John Wayne - dark cherries, blackberries and mulberries are complemented by dried fruits such as figs and plums. Underpinned by fine notes of crème de mure and spicy notes of star anise, cloves and floral accents in the top note.

Mouth

Following the motto 'Form follows Function', this Amarone combines all the expansive and concentrated aromas of the nose in focused fine drinking flow and taut stature. The rich extract is disciplined on the palate and dressed in the finest tannins, reminiscent of low-pile velvet. Fired by the ripe, bright acidity, it quickly picks up speed on the palate and rejoices in the big glasses.
