Nose
The Cava Mirgin Opus Brut Nature reveals abundant yellow fruits on the nose. Mirabelle plum, apricot and dried peach. Dried herbs, such as marjoram and thyme, are a direct complement. The yeast leaves traces in the form of chopped and roasted almonds. With a little oxygen in the glass, sage and matcha tea increasingly spread. Green olive and salt lemons also open up to the patient connoisseur.
Palate
In the glass as well as on the palate, it initially foams up finely and broadly. This creates a certain creaminess around the fruit, which only seconds later falls victim to the onset of acidity. With a lot of finesse and flow, it is ready for a lot of drinking pleasure. The very well-integrated carbonic acid helps to literally clean up the palate and force it into a tight corset. The aromas in the aftertaste are extremely herbal to ethereal. Sage, menthol, but also eucalyptus and nettle ultimately assert themselves and stick to the palate for a long time.
