Wine profile
Case Alte's 4 Filari Grillo originates from the high slopes, at 500 metres above sea level, characterised by clayey and sandy soils. Its vines, planted in 2005, draw their characteristic aromas from the unique terroir.

Harvesting method
The grapes are lovingly harvested by hand and transported to the cellar in small-sized containers of eight kilograms. There they undergo a gentle pressing to release their juicy essence. After a rest period of 24 hours, spontaneous fermentation begins and the wine develops its complexity over six months at a temperature of 10°C in steel vats. Every week it is skilfully blended (battonage) before being left to rest in the bottle for two months before sale.

The 4 Filari Grillo shows itself in a radiant bright yellow, interspersed with attractive green reflections.

Aroma
This wine from 2021 is a true olfactory explosion: with lush notes of citrus fruits such as orange, grapefruit and citrus blossom, accompanied by refreshing mint and maritime nuances reminiscent of mussel shells and gently rising sea breezes. A hint of aniseed and the delicious aroma of fresh ciabatta toasted with salty butter immediately transport us to thoughts of sun-drenched days at the beach.

Taste
On the palate, it is just as impressive: with a pleasant astringency, salty note and fine tannins, it is just as convincing as with a bouquet of herbs that remind us of sage and rosemary. Its spicy, fresh and citrusy character makes it the perfect companion for the delicious dishes of Sicilian cuisine.

Food recommendations
Try the wine with creamy burrata on an exotic papaya salad with fresh mint, crunchy watercress and toasted hazelnuts. Roasted scallops with glazed nectarines and fennel are also a great match. Another treat: aniseed-crusted monkfish with buttered carrots and fresh rosemary.
